
This dinner looks fancy, but it is oh so easy.
Let’s first start off with the chicken… I seasoned and cooked boneless, skinless chicken thighs in a cast-iron skillet with a little bit of olive oil. I made a box of chicken rice pilaf per box instructions and I roasted some carrots and Brussel sprouts in the oven at 425* for about 15 minutes. I drizzled olive oil and seasoned with garlic pepper and seasalt prior to cooking. Easy peasy. Total cooking time 30 mins.
